I love chips. All kinds, with very few exceptions. Chunky chips, pub-style chips, skin on, skin off, curly fries, chip-shop chips, skinny chips, fast food chips and so on. If I was really pushed, I don't really like shoestring fries, but I wouldn't turn them down if they were put in front of me. I feel it's my duty as a Brit do do my part as far as chips go!

The only problem is, of course, that chips are not that great for you in abundance, especially the delicious traditionally deep fried kind that you get in fast food places and restaurants. Shame. The other problem is that we don't all have deep fat fryers in our kitchens like my mum had in my childhood, even if we wanted to cook them this way.


In the past, I have a bag of oven chips knocking around in my freezer for quick dinners. Oven chips are fine, but they just don't give you the same yummy fix as "proper" chips. Recently, there was a day when we were feeling like we wanted a treat, but due to trying to lose weight, didn't want to go into full-on takeaway mode. I was feeling uninspired by oven chips and thought, it can't be that hard to make my own home-made oven chips?


It really wasn't, and once I had made home-made oven chips, I wished I had done it earlier! They really are tasty and not that much effort; no more than roast potatoes. All you need is potatoes and oil. That's it! 2 ingredients can't be bad.

Top Tips

  • Leave the skin on the potatoes when you slice them. It crisps up so beautifully and it's good for you too!
  • Don't be tempted to skip the step of rinsing the par boiled potatoes in cold water. This washes away the starch on the potatoes and makes them much less likely to stick in the oil.
  • Make sure the chips have space in the baking tray. Crowd them and some will be soggy instead of crispy. If you're doubling up the quantity, use two baking trays.

Home-made Oven Chips

Home-made oven chips- only 2 ingredients to make your own delicious oven chips, much lower in fat than the take-away version.

ingredients:


  • 800g potatoes
  • 2 tbsp olive oil
  • salt

instructions

1. Pre-heat the oven to 220 (200 fan), Gas mark 7.
2. Put the oil in a large baking tray and pop it in the oven.
3. Slice the potatoes thickly, about 3cm and then cut the slices into strips 2-3cm wide.
4. Pop the raw chips into a colander and rinse in cold water. 
5. Fill a large saucepan with water and heat it on high. Put the potatoes in the water and par-boil them until they have been boiling for 1-2 minutes.
5. Drain the chips in a colander.
6. Take the baking tray out of the oven and tip the chips into the hot oil. Watch out for hot oil splashes. Give the tray a gentle shake. Again watch out for hot oil. 
7. Sprinkle some salt over the chips.
8. Pop the tray back into the oven and cook for 25-30 minutes until they look golden and crispy. You may want to toss them a little at the half-way point.
9. When the chips are ready, tip them onto some kitchen towel to absorb any excess oil.
10. Sprinkle with a little extra salt (to taste) and serve.

NOTES:

If you want to add some zing to your chips, try adding either Cajun seasoning or peri peri salt about 5 mins before the end and giving the tray a good shake.
