In honour of National Chocolate Cake day, I have been baking- Chocolate Marble Cupcakes with a Fudgy Chocolate Ganache. 

Marble cake always looks impressive. The swirls are pretty and look much more complicated than they really are. All you need is some vanilla cake batter and some chocolate cake batter. Swirl them together and you've got marble cake mixture. Divide the mixture into cupcakes cases and hey presto- chocolate marble cupcakes!

For these chocolate marble cupcakes, I add chocolate chips to the dark part of the mixture. I used dark choc chips, but any type would work. 

The fudgy chocolate ganache makes a lovely chocolatey topping and really makes these marble cupcakes into a bit of a decadent treat. As a bonus, it doesn't need piping! They are perfect cupcakes to serve at a children's birthday party. You could even leave the ganache off, if you want to cut back on the sugar.

Make Chocolate Marble Cupcakes with Fudgy Chocolate Ganache

Make the vanilla cake batter and split between two bowls.

Add cocoa powder and a little milk to one bowl.

Mix together to make the chocolate batter.

Put the two batters together.

Mix the batters together carefully so the colours remain distinct.

Fill the cupcake cases two thirds full.

Bake.

Top with the ganache.

ingredients:

For the cupcakes
  • 225g butter (softened)
  • 225g caster sugar
  • 225g self-raising flour
  • 4 eggs
  • 3 tbsp cocoa powder
  • 1 tbsp milk
  • 1 tsp vanilla essence
For the ganache
  • 100g dark chocolate
  • 1 tbsp golden syrup
  • 25g butter

How to cook Chocolate Marble Cupcakes with Fudgy Chocolate Ganache

  1. Preheat the oven to 190 (170 fan, gas mark 4) .
  2. Cream the butter and the sugar together until smooth.
  3. Add the eggs one at a time and mix well along with the vanilla.
  4. Sift in the flour and mix until well combined.
  5. Spoon half the mixture into a second bowl and add the cocoa powder and the extra tablespoon of milk to loosen it. Mix through until the cocoa powder is combined.
  6. Spoon the cocoa mixture in blobs back into the original mixture. Swirl through with the handle of a spoon, until you can see distinct patterns of the two mixtures, but not so much that it all starts to look brown!
  7. Fill each cupcake case about two thirds full, allowing for a fair bit of rise.
  8. Bake  for 15 mins or until a knife comes out clean.
  9. While the cakes are baking, melt the butter in a small saucepan, on a low heat. Add the chocolate and syrup and stir gently until fully melted and combined. Take off the heat to set. It will remain spreadable, but will lose its runniness.
  10. When the ganache has set and the cakes have cooled, spoon a heaped teaspoon of the ganache on top of each cake, and swirl it with the back of the spoon to spread it a little.
