Winter is officially here this week, with temperatures dropping and talk of the possibility of snow! Can't complain after the warmest December in 100 years though, so bring on the winter warmer cooking!

Classic winter food, Beef Bourguignon, is on my agenda today, but cooked in the slow cooker, so you can come home to the delicious smells of it cooking. 


It's like a hug on a plate when it's cold outside and you need warming up. That fall-apart slow cooked beef and the red wine and garlic are so full of flavour! I've made one for the freezer as well, ready for any late nights at work in the next couple of weeks. 

In this Beef Bourguignon recipe, I used shallots, because I had them to hand and I like the long strings you get from them, as well as the sweetness that they bring.  A white onion would do, if that's all you have. You could also throw a few potato chunks in, if you wanted your Beef Bourguignon to be a complete meal. Otherwise, serve with roasted potatoes or mash and some green veggies.

Slow Cooker Beef Bourguignon

Slow Cooker Beef Bourguignon- the classic French dish made in the slow cooker. Beef, mushrooms, shallots, carrots garlic and red wine. Serve with mash or roast potatoes.

ingredients:


  • 450g braising steak
  • 4 shallots
  • 2 large carrots
  • 6 mushrooms
  • 100ml red wine
  • 350ml beef stock
  • 2 cloves of garlic, crushed
  • 2 tbsp tomato puree
  • 1 tbsp thyme

instructions

1. Chop the braising steak into chunks.
2. Peel the shallots and cut into thick rings.
3. Peel the carrots and cut into thick chunks.
4. Chop the mushrooms in half.
5. Put all the veg and the meat into the slow cooker with the garlic, tomato puree, thyme and red wine.
6.  Add the beef stock and stir through.
7. Pop the lid on and cook on high for 4-5 hours on low for 7-8 hours. 
8. Serve with mashed potatoes and green veggies.
