My husband and I don't often do much about Valentine's Day. The main reason is because it's our wedding anniversary shortly afterwards and that means we can avoid the expensive flowers, pricey set menus and so on, and celebrate two days later! 

Despite being a bit bah humbug about it all, I really wanted to make a Valentine's Cake. I was given a heart-shaped silicone cake mould by one of my lovely teaching assistants, which is just the thing for a Valentine's Cake! It turned out really well- a heart-shaped cake, a chocolate sponge with a chocolate cream cheese filling and pink buttercream on top. The sponge was lovely and light. A good thing considering the rich filling and additional icing on top! 

Icing is definitely not my strong point; I'm still learning all the techniques. So, if you're a whizz with a piping bag, you could probably make it look much prettier on the top than I did! If you are looking for a heart-shaped cake tin, most of the big supermarkets and department stores have them at this time of year. For this cake, you want one that is roughly equivalent to a 20cm tin. I only had one, so had to hold half the mixture back until I could wash the mould again. 

A lot of people complain about silicone moulds, saying that they are impossible to get cakes out of, but I find, if they are cleaned well before every use and are well-greased with butter, they are far more reliable than standard tins. Happy Valentine's Day!

Make Valentine's Day Chocolate Cake

Main steps of the recipe:


Make two heart-shaped chocolate sponge cakes.




Make the chocolate cream cheese filling and spread over one half.


Make the red icing, spread evenly and decorate with chocolate chips.

Valentine's Day Chocolate Cake- an easy recipe for a heart-shaped chocolate sandwich cake with chocolate cream cheese icing filling and red buttercream icing.

ingredients:

For the cake
  • 200g butter, softened
  • 200g caster sugar
  • 4 eggs
  • 190g self-raising flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 2 tbsp milk
For the icing
  • 100g butter, softened
  • 140g icing sugar
  • 1 tsp vanilla essence
  • 1 tsp milk
  • 1 tube red food colouring gel
For the filling
  • 100g dark chocolate
  • 50g butter
  • 1.5 tbsp golden syrup
  • 150g soft cream cheese
For the decoration
  • 50g dark chocolate chips to decorate

instructions


  1. Pre-heat the oven at 160, 180 fan, gas mark 4.
  2. Put all the cake ingredients into a large mixing bowl. Mix them together until you have a smooth cake batter.
  3. Split the batter between two tins, or hold half the batter back for the second batch.
  4. Pop in the oven for approx 20 mins, or until a knife comes out clean and when cooled enough, transfer to a cooling rack.
  5. While it's cooking, melt the chocolate for the filling in a small saucepan with the butter and the golden syrup. Do this on a low heat, stirring often to avoid the chocolate burning.
  6. When the filling mixture is completely melted and combined into a smooth, runny, chocolate liquid, take it off the heat and allow to cool until lukewarm. If in a hurry, pop in the fridge for a couple of minutes to speed it up.
  7. When cooled, stir the cream cheese through until it's completely blended in. Then refrigerate to keep cool.
  8. Blend all the icing ingredients together until you have a smooth, red buttercream. Do not put this in the fridge, or it will be very difficult to spread.
  9. When the cakes are completely cool, smooth the chocolate filling over one half as close to the edges as you can, keeping it reasonably even.
    Pop the other cake on top and very gently press it down.
  10. Smooth the red buttercream over the top and decorate with the chocolate chips.

NOTES:

If you prefer to pipe a design on top of the cake, you will need double the amount of red icing.

If you prefer sweeter cream cheese icing, increase the amount of golden syrup.
