Choc-Chip Orange Muffins

I had the baking itch this week but we're both on healthy eating plans at the moment (My Fitness Pal for me, Slimming World for him), so what to do? Take them to work, after we'd tried one each of course!

With all the orange curd I have on the go after my choc-orange Easter cake, I decided on orange curd muffins with chocolate chips, and they were delicious. I love chocolate and orange as a combination- Terry's chocolate orange at Christmas is a must!  When I was filling the muffin cases, I over-filled them, so some spilled over slightly when they rose. You can probably get 13 out of the recipe, but I tried to squeeze them into 12 for convenience!

Choc-Chip Orange Muffins







Ingredients
(makes 12-14)

2 medium eggs
125ml vegetable oil
220ml milk
200g caster sugar
400g self-raising flour
100g plain chocolate chips
4 tbsp orange curd


Method


  1. Whisk together the eggs, oil and milk until combined.
  2. Add the sugar and whisk again briefly.
  3. Sift the flour into the liquid and use a wooden spoon to stir it through until you have a thick mixture. Limit the stirring as much as possible and don't worry if it's a bit lumpy.
  4. Stir through the choc chips.
  5. Spoon the mixture into muffin cases until they are about half-full.
  6. Put a teaspoon of orange curd on top of each one and then cover with a bit more mixture.
  7. Pop them in the oven at 180 (170 fan, gas mark 4) for 22-15 minutes until they are golden brown and a knife comes out clean.
