Last week, I spotted that Lamb Shoulder was on offer when I was doing my online shopping. I don't cook a lot of lamb but whenever I do eat it, I love it, so I ordered some. When it arrived, I laughed because it was such a tiny, wee cut of lamb shoulder. I had made the classic online food shopping error of not checking the weight- 400g! Oh well, it was the perfect size for two.

Lamb shoulder is best slow cooked, until it's soft and juicy and can be pulled apart easily you find will talk about slow cooking it in the oven, but I always prefer the slow cooker. It's more economical and it means I can use my oven for other things at the same time as cooking the meat, if I want to. I tend not to move away from the classic complimentary flavours for lamb- garlic and rosemary because they just work so beautifully. But I also added thyme, cider vinegar and red wine vinegar. The juices at the end of the cooking made a delicious, sweet, tangy gravy when the meat and veg were lifted out and a few gravy granules were added.

This slow cooker lamb shoulder recipe is suitable for a family meal. Just make sure you buy the right weight for the number of people! For a family of 4, you ideally need 800g-1kg. Add some stuffing and some Yorkshires and you've got Sunday dinner!

Slow Cooker Shoulder of Lamb ingredients

Prepare the veg and put on the bottom of the slow cooker. Pour in the liquids.

Rub the garlic and herbs into the fat of the meat. Put the meat on top of the veg and leave to cook until it's falling apart.

Slow Cooker Lamb Shoulder

Slow Cooker Lamb Shoulder- lamb, slow cooked with potatoes, carrots, garlic and herbs until it's juicy and falling apart. A delicious alternative to your normal Sunday roast, and a lot less effort for the cook!

ingredients:


  • 800g lamb shoulder
  • 4 carrots
  • 1 onion
  • 8 medium potatoes
  • 2 tbsp red wine vinegar
  • 2 tbsp cider vinegar
  • 2 tsp rosemary
  • 2 tsp thyme
  • 2 cloves garlic, crushed
  • 400ml vegetable stock
  • 2 tbsp gravy granules

instructions

1. Peel the carrots and potatoes and chop into large chunks. Place in the slow cooker, covering the bottom.
2. Chop the onion into small chunks and add.
3. Add the vinegars and the stock and stir everything a little.
4. Trim any fat off the lamb shoulder if you wish. If not, score the fat repeatedly with a sharp knife.
5. Rub the crushed garlic into the top of the lamb and sprinkle the herbs over the top.
6. Lay the lamb shoulder  on top of the veg.
7. Cook on low for 7-8 hours.
8. Remove the lamb and use a fork to pull pieces of meat from it.
9. Mix the gravy granules into the meat juices to make a gravy.
10. Serve the meat and veg with the gravy, adding stuffing and Yorkshires, if you wish.

NOTES:

This meal is syn free on Slimming World if you cut all the fat off the lamb and you don't use the gravy granules. If using gravy granules, it will be 2 syns per portion. Stuffing and yorkshire puddings will add syns.

  1. Your Slow Cooked lamb looks just perfect, even if you only got a small joint (I hate that when doing the shop online too!). It's great to be able to cook your carrots and potatoes in the same pot as well, a great idea.
