You'd think that now we're in the summer holidays, I would have all this spare time for making fancy, elaborate dinners. Doesn't seem to quite work out that way somehow! 

This bolognese bake fitted the bill of a comforting pasta meal on a rather cool summer evening last week, with plenty of leftovers for lunch the next day. Pasta, mixed together with a rich, meaty bolognese sauce and topped with grated mature cheese, makes a very tasty dinner. I find that mature cheese is essential to really complement the flavour of the bolognese. It makes a delicious meal, especially when served with a salad and some garlic bread. I love the cheese when it's all melted and crispy around the edges!

Top Tips 


  • Don't let the pasta cook all the way through or it will be too soggy after cooking again in the oven.
  • Make sure you simmer the bolognese sauce until it has reduced somewhat, so you get the more intense flavour.
  • If you want to increase the veg content, you can easily add mushrooms or carrots to the sauce.

Bolognese Bake

Bolognese Bake- a warm and comforting pasta bake, perfect for family meals, pasta mixed with bolognese and topped with cheese.

ingredients:


  • 500g extra lean minced beef
  • 400g pasta
  • 1 onion
  • 400g tinned tomatoes
  • 150ml beef stock
  • 2 cloves of garlic, crushed
  • 1 tbsp olive oil
  • 1 tbsp tomato puree
  • 2 tsp oregano
  • 120g mature cheddar, grated

instructions

1. Pre-heat the oven to 220 (200 fan, gas mark 5).
2. Heat the oil on medium heat in a large saucepan.
3. Chop the onion and add to the pan with the garlic until well-softened.
4. Add the mince, breaking it up a little and stirring occasionally until browned, with no visible pink.
5. Add the tomatoes, oregano and the tomato puree and stir through.
6. Add the beef stock. Bring to the boil and then turn down the heat to a simmer for 15 minutes or until thickened and glossy.
7. In the meantime, bring the pasta to the boil and cook for 5-7 minutes, until partially softened.
8. Drain the pasta and pour into a large casserole dish.
9. Pour the bolognese sauce over the pasta and gently stir through, ensuring it's well distributed.
10. Sprinkle the grated cheese over the top evenly.
11. Pop the dish in the oven for 20-25 minutes or until the top is crispy and browned.

NOTES:

Serve with salad and garlic bread.

Syn-free on Slimming World if you use reduced fat cheddar cheese on the topping and make it your Hex A. If you use lean mince instead of extra lean, it will be 2 syns per portion.
