Oaty Banana Muffins- soft, moist banana muffins with oats. Great for using up ripe bananas and as they are lower in sugar than many muffin recipes, they're great for lunchboxes and after-school snacks.

Usually we eat all the bananas that we buy, but occasionally we have a couple on the turn. I'm not a fan of soggy banana, so I usually make some cupcakes or banana bread. This time I thought I would go for something different, not quite so sweet and cakey- Oaty Banana muffins. Muffins- delicious, banana-yum, oats- makes it more filling so it's less likely I'll eat 3 in a row! The bonus is that they really aren't too sweet as the sugar content is fairly low, so they make a great snack.

So if you have a couple of bananas on the turn, make a batch of these.
It's pretty difficult not to eat the lot when they are still warm, but if you can resist, they will keep for a few days in a tin, or you can freeze a few when they've cooled.

Top Tips

  • Muffins are all about texture, so make sure that you don't over mix. You want it thick and lumpy, but with no loose flour.
  • Mashing the bananas is down to personal preference. I don't like big lumps of banana personally, so I mash them quite well. Leave them lumpy if that's what you like.
  • These muffins brown really well, so don't panic when you see that. As long as they aren't getting any small hints of an even darker colour, they're fine.
  • If you want to make mini muffins, use fairy cake cases instead of cupcake cases and you'll get around 25 mini muffins from the recipe.

Ingredients:

  • 75g butter
  • 250g self-raising flour
  • 125g caster sugar
  • 2 eggs
  • 2 ripe bananas
  • 125ml semi-skimmed milk
  • 50g oats
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp maple syrup (optional)

Instructions:

How to cook Oaty Banana Muffins

  1. Pre-heat the oven to 190 (170 fan, Gas mark 5)
  2. Mix all the dry ingredients together in a large mixing bowl, including the oats, until they are well combined.
  3. Mash the bananas in another mixing bowl.
  4. Melt the butter, pour into the bowl, and whisk the eggs and milk into it with a fork.
  5. Make a space in the centre of the dry ingredients and tip the liquid into it.
  6. Mix it together gently until it's combined and then add the mashed bananas and mix through. It should be thick and quite lumpy, but with no loose flour at the bottom.
  7. Spoon it into a cupcake tin lined with cupcake or muffin cases. Each one should be about 3/4 full so it will rise above the case when it bakes.
  8. Put them in the oven for about 20-22 mins until golden brown and a knife comes out clean.
  9. Optional- brush the tops with a little maple syrup.

Notes:
