Slow Cooker Spanish Chicken is one of my favourite slow cooker recipes as it works in summer and winter. I first had Spanish Chicken in this style when we were staying with a friend. I enjoyed it so much that I made it several times again at home, adapting it over time. It can be made in a casserole dish in the oven but, even better, it works beautifully in the slow cooker! My husband is a big fan, and the added bonus is that it's very light on calories. It's packed with veggies and you can add more on the side too.

Slow Cooker Spanish Chicken is great for freezer meal cooking. We regularly cook up a large batch for the freezer.  The sauce protects the chicken from getting freezer burn. We often eat it with mini roast potatoes but it also works well with jacket potato, new potatoes or rice- very versatile!

ingredients:

  • 4 chicken breasts
  • 800g chopped tomatoes
  • 1 onion
  • 2 peppers (red, yellow or orange)
  • 10 button mushrooms
  • 3 cloves garlic, crushed
  • 1 tbsp tomato puree
  • 3 tsp paprika
  • 1/2 tsp oregano
  • 150ml chicken stock

How to cook Slow Cooker Spanish Chicken

  1.  If using chicken breasts, cut them each in half. Lay the chicken in the bottom of the slow cooker. If you are using thighs, remove the skin and bone and put in the bottom of the slow cooker.
  2. Pour the tinned tomatoes over the top.
  3. Chop the onion and the pepper into small chunks and the mushrooms into halves and add to the slow cooker.
  4.  Add the garlic and the tomato puree and the paprika, and then stir in the stock.
  5. Cook on medium for 4-5 hours, or low for 6-7.

NOTES:

This recipe can be made in a casserole dish and cooked in the oven- cook on 180 (160 fan, gas mark 4) for around 50 mins, until the chicken is cooked through. Chicken breast will take longer to cook through than thighs.
