Apple and cinnamon just belong together don't they? There's something very warm and comforting about the flavours and adding them to scones makes a winning combination. They are especially amazing when still warm and served with butter. Seriously, droooool!

Once you've eaten one apple cinnamon scone, it's very easy to accidentally eat two, three, four! They're not too sweet so it doesn't feel like you're being too naughty. They are very easy to make in big batches and you can freeze them. So you could whip some out at very short notice and wow your guests with what a super host you are. I won't tell if you won't!

Apple and Cinnamon Scones

Apple and Cinnamon Scones- fragrant spiced apple scones, delicious served warm with butter for afternoon tea.

ingredients:

  • 450g self-raising flour
  • 2 tsp baking powder
  • 110g butter, cold
  • 200ml skimmed milk
  • 75g caster sugar
  • 2 apples
  • 2 tsp cinnamon
  • 2 tbsp demerara sugar

instructions:

  1. Pre-heat the oven to 220 (200 fan, gas mark 7).
  2. Mix the flour, sugar, cinnamon and the baking powder together well. in a large bowl
  3. Rub the butter in, until it has a breadcrumb texture.
  4. Peel the apples and chop into very small chunks. Add to the dry ingredients and mix through.
  5. Pour the milk in, a little at a time, stirring the scone mixture roughly with a fork in between.
  6. When almost all the liquid has been added, make sure the dough has no dry flour left and it's nice and sticky. Leave a small amount of the liquid behind for glazing.
  7. Lightly flour a surface and tip the dough out onto it. Sprinkle some more flour onto the dough.
  8. Use a rolling pin to roll the dough out into a rectangle, about 2cm thick. It should be fairly smooth if you've used enough flour.
  9. Grease a baking tray (I used a cookie sheet).
  10. Use a round cutter to cut shapes in the dough. I used an 8 cm cutter.
  11. Glaze the scones with a little milk and sprinkle a little of the demerara sugar on top of each one.
  12. Pop in the oven for 15 mins or until they are fairly firm and golden on top.
  13. Cool on a cooling rack, but definitely eat one warm with some butter!
