It's a very simple salmon marinade with some classic Asian flavours- soy, ginger, garlic, honey. It's delicious when used to top off noodles, but if you're more of a rice fan that works too. I choose to pan fry it because crispy skin is delicious!
It's a great meal for packing in some veggies- peppers, onion, broccoli, beansprouts, cabbage, whatever you fancy will add some lovely crunch against the soft salmon and noodles.
Top Tips for making Asian Salmon with noodles
- If you have sesame oil, or can get some, then it's worth using for both the salmon and the noodles because it gives a more authentic flavour overall. If you can't, don't worry, your usual oil will be fine.
- If you don't have several hours to marinade the salmon, pour it over for 10 minutes prior to cooking for a quick marinade.

Asian Salmon with Noodles
Asian Salmon with Noodles- a quick and easy recipe for salmon marinated in soy, ginger, lemon and other spices and served with stir fried noodles and vegetables.

ingredients:
For the stir fry:
- 4 salmon fillets (skin on)
- 1 yellow pepper
- 1 orange pepper
- 1 onion
- 200g tenderstem broccoli
- 800g medium egg noodles
- 1 tbsp sesame oil
For the marinade:
- 2 cloves of garlic, crushed
- 5 tbsp light soy sauce
- 2 tsp ginger, grated
- 3 tbsp lemon juice
- 1 tbsp sesame oil
- 2 tsp honey
- ground black pepper
instructions
1. Mix all the marinade ingredients together in a bowl.
2. Lay the salmon fillets in a dish, skin side up and pour the marinade over the top. Leave for 2-3 hours.
3. Slice the pepper and the onion into long strips.
4. When the salmon is well-marinaded, heat the sesame oil on medium heat in a wok.
5. Add the peppers, onion and broccoli to the wok to soften.
6. Heat a large frying pan on a high heat. Place the salmon fillets in the pan, skin-side down and turn the heat down to medium. Gently press the fillet with your spatula for 10-15 seconds to ensure the skin stays flat. Fry it for 3-4 minutes and when crispy, flip over and fry from the other side for another 2-3 minutes, depending on the thickness. When cooked, they should be pink and translucent in the centre and light pink on the outside.
7. While the salmon is frying, add the noodles to the wok and pour the rest of the marinade over them. Stir fry for 3-4 minutes until the noodles have softened and are well coated in the marinade.
8. Serve the salmon fillets on top of the noodles.
NOTES:
If you don't have time to let the salmon fully marinate, just pour it over and leave for 10 minutes.
