I have tended to avoid cauliflower in the past, because I find it a bit of a bland vegetable. The only way I really enjoyed it was when it's slathered in cheese sauce on the side of a roast dinner! So, I thought, why not make a cauliflower cheese soup? It was still a little on the dull side until I used smoked cheese and then, and here's the magic, Dijon mustard. I can't tell you what a huge difference the zing of the Dijon makes. It transforms the whole soup from meh to wow. Gorgeous.

Prep the all the veg- add the cauliflower, potato and onion to the slow cooker.

Add the stock and stir through.

Cook and then blend until smooth. Add the smoked cheese and stir until melted.

Slow Cooker Smoky Cauliflower Cheese Soup- cauliflower soup made in the slow cooker with smoked cheese and Dijon mustard. A delicious winter lunch option.

ingredients:

  • 900g cauliflower
  • 300g potatoes
  • 1 onion
  • 900ml vegetable stock
  • 60g smoked cheese, grated
  • 2 tsp Dijon mustard
  • 1 tsp salt

instructions

  1. Peel off the leaves of the cauliflower and cut the head into large florets.
  2. Peel the potato and chop into large chunks.
  3. Peel the onion and dice.
  4. Add all the veg and the salt to the slow cooker and pour over the stock.
  5. Cook on high for 3 hours or medium for 5.
  6. Use a stick blender to smooth the vegetables into a soup. Add a little more water if it's too thick for your taste.
  7. Add the grated smoked cheese and the Dijon mustard and stir through.
  8. Serve.
