This spicy, sausage pasta recipe is just the thing to keep your family warm on a cold, wintery evening. It's pretty quick to make with grilled sausages in a tomato- based sauce and a bit of spice from the crushed chillis. It's easy to make and can be doubled to feed a crowd, if needed.
Make Spicy Sausage Pasta
Main steps of the recipe:
Soften the onions, red pepper, crushed chilli and garlic in the oil.
Stir through the tomato puree.
Add the tinned tomatoes.
Add the stock.
Grill the sausages
Slice the sausages into 4s
Stir in the sausages
Pour the sauce onto the cooked pasta and stir through

Spicy Sausage Pasta
Spicy Sausage Pasta- a simple pasta dish with grilled Cumberland sausages and a spicy tomato and red pepper sauce. A delicious, comforting dinner.

ingredients:
- 8 Cumberland sausages
- 400g tinned tomatoes
- 1 red pepper
- 1 onion
- 200ml beef stock
- 2 cloves of garlic, crushed
- 1 tbsp tomato puree
- 2 tsp crushed chillis
- 300g pasta
- 1 tsp olive oil
instructions
- Put the sausages under the grill until browned and cooked through. Then remove.
- Put the pasta on to boil. Drain when cooked.
- Heat the oil in a medium saucepan on medium heat.
- Chop the onions into medium chunks and soften in the oil with the garlic.
- Chop the red pepper and add to the pan with the crushed chilli until softened.
- Add the tomato puree, stir through and allow to cook for a minute or two.
- Add the tinned tomatoes and stir through.
- Pour on the beef stock, stir and leave to simmer for around 10 minutes until slightly reduced.
- Slice the sausages into 4 chunks each and add to the sauce and leave to simmer for a further 5 minutes.
- Pour the sauce over the drained, cooked pasta and stir through.
- Serve with a little grated cheese, if desired.
NOTES:
Adjust the amount of crushed chillis to suit your taste.
