I love an English breakfast, especially at the weekend, even better if you're eating it at big family gathering. What I don't love, is all the pots and pans that need cleaning afterwards. The worst, the absolute worst, is the grill. I absolutely hate cleaning it. This lazy breakfast traybake is a winner on that front. One baking tray and you're done! Sausages (Cumberland are best by far), bacon, mushrooms, tomatoes and Cajun spiced potatoes- amazing.

I like to think of the breakfast traybake as a base breakfast. Something you can build on. I will happily eat it for breakfast and not need anything else. But, if you can't imagine a cooked breakfast without beans or eggs or toast, you can easily serve those on the side as well for a really monster breakfast/brunch. The recipe as it stands, serves 4, but you can easily double it and use two baking trays.


Make Lazy Breakfast Traybake

Chop the potatoes into small chunks and mix with the oil and the Cajun spices.

Lay the sausages on the baking tray and prick them with a knife. Scatter the potatoes between them.

After the sausages have been browned, add the chopped mushrooms, tomatoes. Curl the bacon up and squeeze into any available spaces.

When the bacon is cooked through, serve along with any extras.

ingredients:

  • 600g potatoes
  • 8 Cumberland sausages
  • 8 rashers of bacon
  • 10g mini Portabella mushrooms
  • 8 tomatoes on the vine
  • 1 tbsp olive oil
  •  2 tsp Cajun spices

How to cook Lazy Breakfast Traybake

  1. Preheat the oven to 200 (180 fan, gas mark 5)
  2. Chop the potatoes into small chunks and the mushrooms into quarters.
  3. Put the oil and the spices into a large bowl and mix the potatoes through the oil well.
  4. Tip the potatoes onto a baking tray and lay out the sausages in between.
  5. Pop in the oven for 10 minutes.
  6. Remove the tray, turn the sausages and scatter the tomatoes and mushrooms. Curl the bacon up and place in the gaps. 
  7. Cook for another 15 minutes or until the bacon is crispy.
  8. Serve, along with any extra breakfast items you choose to add.

NOTES:

You could add toast, eggs of your choice and beans should you wish.
