I absolutely adore watermelon. Nothing beats it for pure juiciness and it's not overwhelmingly sweet. That makes it perfect to be served with a savoury flavours. The classic combination of feta and watermelon doesn't need too much adding too it. I simply chop some cucumber and fresh mint and then add a little home-made balsamic dressing. And there you have it, the perfect salad for your next BBQ or a nice lunch on a hot day; quick and easy to make.

Watermelon and feta salad- a light refreshing salad, perfect for lunch or as a side dish. Sweet fruity watermelon with feta cheese, cucumber and fresh mint, drizzled with a home-made balsamic dressing.

ingredients:

For the salad
  • 800g watermelon
  • 100g feta cheese
  • 1/2 a cucumber
  • small bunch of mint
For the dressing
  • 6 tbsp extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

instructions:

How to cook Watermelon and Feta Salad

  1. Chop the watermelon into large cubes (or use pre-chopped).
  2. Slice the cucumber into 3 cme slices and then cut into quarters.
  3. Chop the mint leaves fairly finely.
  4. Mix these together in a large bowl.
  5. Slice off the correct amount of feta cheese.
  6. Crumble the feta cheese over the top of the salad.
  7. Mix together the dressing ingredients and drizzle over the salad just prior to serving.

NOTES:

You can make this slightly ahead of time and refrigerate. I wouldn't go much further than an hour or so before, Make sure you don't dress it until you're ready to serve.
