This recipe gives you dessert ready in 12 minutes. You can't ask for quicker than that! Cinnamon coated apples topped with sponge- delicious! 

I prefer to use cooking apples for most baking recipes where apples are required. They are beautifully sharp, giving the right contrast to whatever they are in; sweet sponge, sweet pie crust, sweet cake etc. Bramley apples are the gold standard of cooking apple, if you can get them.

Top Tips for making Microwave Apple Cinnamon Pudding

  • I use a 14 x 25 cm glass dish as it fits in the microwave and allows space for the sponge to rise. If you use a smaller one, but you'll have to watch carefully for overspill as it bakes.
  • I use Bramley cooking apples for the contrast between the sharpness of the apples and the sweet sponge. If you only have eating apples to hand, leave out the brown sugar.
  • The pudding will keep for a few days and can be reheated in the microwave before serving.

Make Microwave Apple and Cinnamon Pudding

Peel the apple.

Chop the apple into small chunks.

Put in a microwavable dish and mix with the brown sugar and cinnamon.

Mix the sponge ingredients together in a separate bowl.

Pour the sponge mixture over the apple chunks and spread evenly.

Bake in the microwave.

Serve with custard or ice cream.

The leftovers can be reheated.

ingredients:

  • 100g butter
  • 100g caster sugar
  • 100g self raising flour
  • 2 eggs
  • 1 large Bramley apple
  • 0.5 tbsp brown sugar
  • 1 tsp cinnamon

How to cook Microwave Apple Cinnamon Pudding

  1. Peel and chop the apple into small chunks (2cm).
  2. Put the apple in the bottom of a glass microwavable dish (14 x 25cm) and mix with the brown sugar and cinnamon.
  3. Melt the butter.
  4. Pour the butter into a mixing bowl and mix in the flour, eggs and caster sugar. 
  5. Mix together until smooth.
  6. Pour the mixture on top of the chopped apple.
  7. Spread the mixture gently so it's even and the apple is mostly covered.
  8. Pop in the microwave for around 8 minutes in an 800w microwave. Slightly less in a lower wattage. 
  9. Take it out and leave it for another minute (microwaved foods carry on cooking for a while after they come out.)
  10. Serve with custard or ice-cream.

  1. It worked perfectly!! The apples were soft although still a little bite. The brown sugar melted and combined with the cinnamon wonderfully.

    Tip for others: if you don't have self raising flour. A level teaspoon of baking power in the mixture works just as well. (1tsp per 100g of plain flour). Also tastes great with whipped or pouring cream!!
