Slow Cooker Chicken Cacciatore with Bacon- a slow cooker version of Chicken Cacciatore with peppers, mushrooms and bacon. Very easy to make for a delicious family meal on cold days.

Chicken Cacciatore is an Italian classic with many different versions served across Italy. It means hunter-style chicken and most often includes, tomatoes, rosemary and onion and either red or white wine (depending on which part of Italy it's being served in.

My version, for the slow cooker, includes some of the other common ingredients- red wine, mushrooms, peppers and garlic and a bonus ingredient of bacon. Chicken Cacciatore is most often served with polenta, but you could use pasta or mash, whatever your personal preference. In summer, serve with salad.


Top Tips

  • If you prefer a chunky stew style cacciatore, chop your veg into large chunks. Otherwise chop them into 2cm chunks and just quarter the mushrooms. The bacon should always be in big chunks or it will just disintegrate.
  • If you don't like to use red wine in your cooking, it's fine to leave it out. I recommend replacing with a tablespoon of balsamic vinegar and 150ml chicken stock.
  • This recipe can be made in large batches and portioned out to freeze. Perfect for convenient weekday meals when you're busy.

Make Slow Cooker Cacciatore with Bacon

Chop all the veg.

Add to the slow cooker with the tinned tomatoes, chicken and the bacon.

Add the garlic and rosemary.

Pour in the red wine or the chicken stock (if using) and stir through.


Cook.



Serve with mash, polenta or pasta. Add some green veg, if you wish.

  • 4 chicken breasts
  • 8 rashers of bacon
  • 1 red pepper
  • 1 yellow pepper
  • 1 onion
  • 400g tinned tomatoes
  • 150ml red wine or chicken stock
  • 200g chestnut mushrooms
  • 3 cloves of garlic, crushed
  • 2 tsp rosemary

How to cook Slow Cooker Chicken Cacciatore with Bacon

  1. Chop the peppers and onion into small 2cm chunks.
  2. Quarter the mushrooms.
  3. Trim the fat off the bacon rashers and then cut into quarters.
  4. Add to the slow cooker with the chicken and tinned tomatoes.
  5. Add the garlic and rosemary.
  6. Stir through the chicken stock and red wine.
  7. Cook on low for 6 hours or high for 3 hours.
  8. Serve with mash, polenta or pasta.

NOTES:
