Spicy Chicken and Mozzarella Pasta Bake is one of those easy, comforting dinners that I'm always in the mood to eat. There's no complicated ingredients that I need to shop for so, I can pretty much make it on a whim. If I don't have mozzarella I chuck grated cheddar over the top instead. Easy.

This pasta bake has chicken, red pepper, onion and sweetcorn in, but you could switch for any of your favourite veg instead. Fan of broccoli? Stick in in. Mushrooms? That will work too. It has a lovely hot of chilli in the sauce which contrasts nicely with the mild flavour of the mozzarella.

My absolute favourite part of the whole bake is the cheese topping. Mozzarella bubbles and turns golden so beautifully, when it's cooked, and has that slightly salty, creamy flavour. Delicious!

Top Tips for making Spicy Chicken and Mozzarella Pasta Bake

  • Make sure you don't cook the pasta all the way through, or it will go very soggy when it cooks further in the sauce.
  • If the mozzarella isn't golden at the end of the cook time, pop it under a hot grill for a couple of minutes to finish off.

Make Spicy Chicken and Mozzarella Pasta Bake

After you have put the pasta on to boil, chop the veg and soften in a pan with the chilli flakes and garlic.

Chop the chicken into chunks and pan fry until golden.

When golden, remove from the heat.

When the veg has softened, stir through the tomato puree.

Stir in the tinned tomatoes and the chicken stock.

Add the sweetcorn and chicken and simmer.

When the pasta is softened, drain and tip into the casserole dish. Add the sauce and mix through.

Cover with the cheddar and mozzarella.

Bake until golden.

Serve.

ingredients:

  • 3 chicken breasts
  • 300g pasta
  • 400g tinned tomatoes
  • 1 onion
  • 1 red pepper
  • 100ml chicken stock
  • 100g frozen sweetcorn
  • 150g mozzarella, grated
  • 150g cheddar, grated
  • 1 tbsp tomato puree
  • 2 tsp chilli flakes
  • 2 garlic cloves, crushed
  • 2 tsp olive oil

How to cook Spicy Chicken and Mozzarella Pasta Bake

  1. Put the pasta onto boil for around 3/4 of its usual cooking time, until it's softened, but not fully cooked, then drain.
  2. Chop the pepper and onion into small 1 cm chunks.
  3. Soften in a medium saucepan with the chilli flakes and garlic, using 1 tsp of olive oil.
  4. Chop the chicken into 3-4cm chunks and pan fry in a medium saucepan until golden, then set aside.
  5. Once the pepper and onion mixture has softened, mix the tomato puree through and add the tinned tomatoes and chicken stock. Stir and leave to simmer for 10 minutes.
  6. Add the chicken and sweetcorn and stir.
  7. Tip the drained pasta into a casserole dish and add the sauce. Stir through gently.
  8. Cover the surface of the pasta with a mixture of the mozzarella and cheddar.
  9. Bake at 200 (180 fan, gas mark 4) for 20-25 minutes until golden.
  10. Serve with a side salad.

NOTES:
