This chicken and leek soup is so filling for a cold day, and has so much flavour, that it has rocketed to the top of my favourite soups list. It's great for when you have a couple of spare chicken breasts left in a pack. Just add potato, garlic, onion and leek and let the magic happen!

Top Tips
- Make sure you chop the chicken into chunks as per recipe. If you leave them whole, they will need shredding afterwards; an extra step you don't need.
- When you're blending the soup, really make sure you have blitzed it smooth. Small pieces of chicken left in can give it a pasty texture.
- If you're making a big batch to freeze, I recommend the microwavable soup cups. Defrost and eat within 3 months.

ingredients:
- 3 chicken breasts
- 500g potato
- 2 leeks
- 1 onion
- 2 cloves garlic, crushed
- 1.5 litres chicken stock
instructions:
How to cook Slow Cooker Chicken ad Leek Soup
- Chop the chicken breasts into 5-6 chunks.
- Peel and chop the onion and the potatoes.
- Slice the leeks.
- Add the chicken and the veg to the slow cooker with the garlic.
- Pour in the chicken stock and stir through.
- Cook on high for 3-4 hours or medium for 4-5.
- When cooked through, blend with a stick blender. Take care as it will be very hot still.
- If at this point, it's too thick for your personal taste, add more water and stir until you have the consistency you prefer.
- Add salt and pepper to taste.
- For freezing- pour into containers or soup cups, allow to cool and then freeze.
- Otherwise, serve with some crusty bread and butter.
