Cold-Brew Iced Tea

Cold brewed iced tea- an incredibly simple way to make perfect iced tea. Simply make it with cold water and put it in the fridge! You can add a fruit flavour of your choice- peach, lemon, raspberry, the choice is yours.




I am absolutely obsessed with iced tea. I love it. Somewhat unusual for a Brit- we're much more in love with traditional tea, the hot kind. Don't get me wrong, I love that too. It's an essential part of my day- teachers are almost entirely fueled by tea!

My love for iced tea came from visits to America, where it's often bottomless, so bring on the refills! Here in England you don't find it often, apart from the rather nasty mass-produced sweetened stuff.

So how is iced tea made? There are several ways and they are all incredibly simple, thankfully!

1. Cold brewed- tea steeped in cold water and chilled at length.
2. Ice chilled- hot tea quickly chilled down with ice.
3. Hot brew- hot tea allowed to cool and then ice added.

Noting scary or complicated there- super simple! For me, cold brewed iced tea is the gold standard. It has a good strong tea flavour but without the bitterness that's produced by hot water.

Top Tips 

  • Good quality tea will get you a better flavour. I find that Assam tea works really well, my personal favourite is the Twinings brand. There are some who say loose leaf is best, but I find good quality tea bags work brilliantly. Use whichever you have.
  • Use a ratio of 1 teabag per 500ml water with one extra teabag if you're making 2l, or 2 tsp loose leaf tea per 500 ml.
  • If you want to flavour your iced tea with fruit, make sure you crush the fruit in your jug before adding the water, to allow the flavour to come through. Peaches, lemon and raspberries are all good options.
  • If you like your tea milder, you can cut the steeping time in half. The first time you make it, taste it at the half-way point and see what you think.
  • Cold-brew can be kept for around 3 days in the fridge, as if it would ever last that long!

  • 2 litres of cold water
  • 5 tea bags or 8 tsp loose leaf tea
  • ice
  • optional- fruit of your choice

How to cook Cold Brew Iced Tea

  1. If you're making a fruit flavoured iced tea, start by adding the fruit to the jug and crushing it a little. For 2l iced tea, use one peach, sliced, or a handful of raspberries (frozen or fresh), or half a lemon.
  2. Put your tea bags/loose leaf tea in the jug.
  3. Add cold water to the top of your 2l jug.
  4. Pop in the fridge to steep for for 12 hours.
  5. Strain the tea if you have added fruit or used loose leaf tea.
  6. Serve in large glasses with ice and any garnishes that you like.
