Jump to Recipe In the current climate, it's more important than ever that we make sure that we limit food waste. I already have quite a few recipes for using up ripe bananas but, when I found I had two on the turn this week, I wanted to make a dessert, rather than cake or muffins.

This chocolate banana pudding is a throw it all in, mix it all up and leave it type of recipe, with the bonus of making its own chocolatey sauce. No fancy baking skills required, just you, a hand mixer and your slow cooker. It's ideal for serving up to a big group and you don't need anything with it since is has its own sauce. Of course that doesn't mean you can't serve it with cream, custard or ice cream; I won't stop you!

Top Tips

  • If you have more than two bananas available, go ahead and use them. Three or four will be fine too.
  • All slow cookers cook differently so, after an hour and a half, check through the lid. If the sponge looks mostly matte on top, then it's probably ready.
  • This dessert doesn't keep all that well, so it's best eaten freshly cooked, or within a couple of days. It will be rubbery if eaten cold, so warm it through properly if eating the next day.

How to make the recipe


Put all the ingredients for the sponge, except the banana, in a large bowl.

Use a hand mixer to mix it all together and then add the bananas and mix those in too.


Pour the mixture into a greased slow cooker.

Mix together the ingredients for the sauce.

Pour the sauce over the sponge mixture.

Bake on high for 2 hours.

Serve.

Ingredients:

For the sponge
  • 100g butter plus a little for greasing
  • 250g self-raising flour
  • 120g caster sugar
  • 30g cocoa powder
  • 1 tsp baking powder
  • 3 eggs
  • 150 ml milk
  • 100g dark chocolate, melted
  • 2 ripe bananas
For the sauce
  • 100g light Muscavado sugar
  • 20g cocoa powder
  • 300ml boiling water

  1. Using a hand mixer, mix together all the sponge ingredients except the bananas, until fairly smooth.
  2. Add the bananas and mix again.
  3. Pour the mixture into a greased slow cooker
  4. Mix together the sauce ingredients until dissolved.
  5. Pour the sauce over the sponge mixture.
  6. Bake on high for 2 hours.
