Microwave Double Chocolate Pudding

Microwave Double Chocolate Pudding- a delicious, brownie-like pudding that can be whipped up in 10 minutes using a microwave. Gooey chocolate sponge dotted with white chocolate chips.

Do you sometimes fancy dessert but you've got nothing in and you just don't want to spend ages making something from scratch? This is a regular occurrence in our house. I have a couple of microwave desserts that are great for this- Apple and Cinnamon Pudding and Syrup and Ginger Pudding. But, sometimes only chocolate will do!

There are absolutely tonnes of microwave chocolate mug cake recipes out there, The problem, I find, with these mug cake recipes, is that they aren't quite chocolatey enough. They are also aimed at one person, so no good when there are two of you, or if you fancy having it again tomorrow. Who can be bothered making it twice? I'm all about saving time and making a big batch!

My microwave double chocolate pudding has plenty of cocoa and white chocolate chips for that chocolatey goodness. It intended to stay just a little bit gooey and brownie-like. I make it in the dish that it's going to bake in, to save on washing up too! I use a lot less sugar than most similar puddings as there's enough sweetness from the white chocolate chips and enough richness from the cocoa.

To make the pudding, you're looking at around 5 mins of prep and under 5 to cook it. Anyone can bear 10 minutes for a delicious dessert, right? Serve it up with whatever floats your boat- double cream, ice cream, custard. It all works! My personal favourite is to have it with really thick natural yoghurt. It really complements the sweetness.

Top Tips

  • Mix everything together in the dish that you're going to cook it in. Make sure it's a microwavable dish.
  • This recipe is aimed at using limited utensils and being quick and easy, but if you prefer to sieve the cocoa rather than press the lumps out with a spoon, go ahead.
  • I recommend a glass dish- I use the Pyrex oval 0.75 litre dish which is roughly 9x7 inches.
  • Not a fan of white chocolate chips? It's fine to swap for milk chocolate chips, but I wouldn't recommend using dark chocolate- it's not quite sweet enough to balance against the cocoa.
  • If you like your dessert fudgy and brownie-like, then it should be glossy in places on the top when cooked. If you prefer it more cake-like, it should be matte across most of the top.

Put the dry ingredients into the dish you are going to use.

Mix the dry ingredient together, making sure you disperse most of the cocoa powder lumps.

Add the eggs, melted butter, milk and chocolate chips.

Mix together.

Microwave.

Serve, with ice cream, cream or custard.

Ingredients

  • 110g self-raising flour
  • 50g caster sugar
  • 40g cocoa powder
  • 40g melted butter
  • 2 medium eggs
  • 75 ml semi-skimmed milk
  • 100g white chocolate chips

Instructions

  1. 1) Put all your dry ingredients, except the chocolate chips, into a 0.75l microwaveable dish.
  2. 2) Stir them together and use your spoon to disperse any lumps of cocoa powder.
  3. 3) Add the eggs, melted butter, milk and white chocolate chips and mix through until you have a thick, glossy mixture.
  4. 4) Smooth the mixture out, so that it's even in the dish.
  5. 5) Pop in the microwave for 3.5 minutes at 800 watts. It should still have glossy patches on the top, if you want it fudgy and brownie-like.
  6. 6) Serve with your side of choice- cream, ice cream or custard.
