Fish and chips is just essential British food. There's something very comforting about it, perhaps because it reminds me of childhood holidays, eating fish and chips out of the paper on the seafront, and university, eating chips on the way home from the pub!

The trouble is that, like most delicious foods, and definitely most take-aways, fish and chips are not great for those trying to lose weight or live a healthier lifestyle. At least, not in their traditional, yummy, crispy, deep-fried form. So what to do if you want to reduce those calories a wee bit? Well, the first thing is to make it at home so you can keep it healthy and the second is to find ways to reduce the oil right down. 


There are two options for the fish- batter or breadcrumbs. Home-made fish and chips are far  easier to make with breadcrumbs instead of batter, so that's what I use. Breadcrumbs are also the more healthy option. Much less mess too, which gets the thumbs up from me!


My version of home-made fish and chips uses breadcrumbed cod which has an added touch of smoked paprika and garlic in the mix, to add a bit more flavour. It's really no fuss, there's no oil slick left behind and it doesn't make you feel over-full when you've eaten it, so it's great for summer too. Delicious crispy fish for a many fewer calories!


I can see us eating this regularly as a Friday treat!

Home-Made Healthier Fish and Chips

Home-Made Fish and Chips- a healthier way to have fish and chips with home-made breadcrumbed cod and home-made oven chips. Syn free on Slimming World if you use spray oil.

ingredients:


  • 2 cod fillets (140g each)
  • 1 slice of bread
  • 1 egg
  • 2 cloves of garlic, crushed
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 0.5 tsp olive oil
  • pinch of salt

instructions

1. First go to the home-made oven chips recipe listed in the notes below, and make the chips.
2. Straight after you have put the chips in the oven, put the bread, garlic, salt, paprika and onion powder into a food blender, or use a stick blender, to whizz them up into fairly fine breadcrumbs.
3. Put the breadcrumbs into a medium, shallow dish big enough to lay the cod in a piece at a time. 
4. Crack the egg into a second, similar dish and whisk it up with a fork.
5. Brush a baking tray with some oil and set aside.
6. One at a time, lay each cod fillet in the egg, holding on to one end and getting as much coverage as you can, then flip it over to cover the other side. 
7.Then lay the cod fillet down fully in the dish of breadcrumbs, using your fingers to cover it with more breadcrumbs. Flip it over and repeat so that it's well covered, and then lay it on the baking tray. 
8. Repeat with the second fillet.
9. After the chips have been cooking for 10-15 minutes, and are browning, put the baking tray of cod in the oven.
10. They should be golden and crispy after 20 minutes, but if they aren't quite there, leave them for another 5.
10. Serve with peas or other green veggies.
