I'm always looking for quick and easy recipes for weeknight meals and salmon is a great go to protein for that. It cooks very quickly and really takes to any marinade that you put it in. Add rice and noodles and you've got dinner in half an hour.

Sweet chilli is one of my favourite sauces/marinades- the kick of the chilli cut with the sweetness of the honey is perfect. I like to add a touch of garlic and lime to enhance the flavours too.

I prefer to oven bake the salmon so I don't need any oil and don't need to watch over it while I make the accompaniments.

Top Tips

  • Mix the marinade together really well so that the flavours are combined and spread evenly over the salmon.
  • If you have time, you can leave the salmon in the marinade for up to two hours.
  • If you don't have chilli flakes and chilli powder, just use one or the other.

Sweet Chilli Salmon Fillets- a quick and easy recipe for marinated salmon in simple sweet chilli sauce. Serve with rice, noodles or salad.

ingredients:

  • 2 salmon fillets
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 2 garlic cloves, crushed
  • 1/2 tsp hot chilli powder
  • 1/2 tsp chilli flakes

How to cook Sweet Chilli Salmon Fillets

  1. Preheat the oven to 200 (180 fan, gas mark 6).
  2. In a medium-sized bowl, mix the honey, garlic, lime juice and chilli together well.
  3. Place the salmon in the bowl and turn the fillets until they are well-covered in the marinade.
  4. Cover and leave in the fridge for 20 minutes, or up to 2 hours if you wish.
  5. Place the salmon fillets on a baking tray and cook at 200 (190 fan or gas mark 6) for 8-10 minutes dependent on the thickness of the fillets.
  6. When cooked through, serve on a salad, rice or noodles.

  1. I love salmon, it's my favorite fast food and I always keep some filets in the freezer. Must confess, our freezer is never that tidy. Ours is more like a coffer and you can't see anything. It's like going on a treasure hunt every time you open the lid, haha
